Be it kulen, sausage or bacon, nobody leaves Slavonia hungry. However, the offer is not reduced to meat delicacies. Slavonia has always been a region rich in fish with angling as a part of life. Specialties made from the river fish such as the smoked carp, fried catfish, perch and trout will make you lick your fingers. Wine tourism in this area has become very popular encompassing an entire range of activities, from visiting wine roads, organised tours and visits to vineyards, studying oenology, visiting wine cellars, wine museums as well as various events and festivals connected to wine and viticulture. It is said that ‘In wine, there is truth’, however, if you are looking for a panacea, Slavonians will most certainly offer brandy, what else! Its history goes back to the ancient times and it was enjoyed by everyone, from peasants to kings.

KULEN (FLAVOURED SAUSAGE)

Kulen or kulin is the most prestigious, most appreciated and even the most expensive sausage product in Slavonia, from where it originates and is being prepared until today. The kulen recipe at first glance is very simple. The best parts of pork cleaned from fat and connective tissue, ground paprika, garlic and salt make a filling for cleaned intestines.

However, every nuance is important when making kulen and can be crucial at kulen fairs, national competitions of kulen masters. While most connoisseurs agree that kulen should be cut into ‘finger-thick slices’, some of the experts hold such cutting a blasphemy considering that the most noble Croatian sausage can be savoured only if it is cut thinly and served on a wooden tray.

The story of fiš paprikaš is a story on the wealth of flavours, abundance of ingredients as well as knowledge woven into its preparation and the wealth of Slavonian rivers and lakes. At least two fish varieties, mostly catfish and carp, must be accompanied by the tastes of onion, mild or hot paprika and white wine. These ingredients make a dish that thrills everyone.

It is gladly served in all situations – from family and friendly gatherings in the warmth of one’s home up to different festivities in world-class restaurants. They will warm you in autumn and winter days better than anything else and will make your spring or summer trip unforgettable.

BRANDY

True brandy, the proverb has it, is the Slavonian brandy. The history of making this world-renowned alcoholic beverage is exceptionally rich. In Šokadija, there has never been a house or cooperative that did not have a plum orchard. In the 19th century, the making of brandy took place in potters’ cauldrons or boilers. All the parts of the cauldron were made of baked earth that was later replaced by metals.

If the plum bore fruit, there was no fear of winter: jam was made, the fruit was dried but most of the love was invested into making brandy. The richer Šokci had their own distilleries with a brandy kettle, while the poorer ones would borrow them. Anyhow, everyone made brandy and the tradition remains until today.
